This specialty hotpot was created in the 1970s by a group of local chefs called the “Howakai.” The local “Yama no Imo” (mountain yam) has a firm texture and stickiness similar to wild yams, due to the temperature difference between day and night. They grated the yam, formed it into a ball, and added it to the hotpot. The chicken, maitake mushrooms, parsley, and other ingredients are mixed with the special soup to create the exquisite “Yama no Imo Nabe.”
