About Yamaimo Nabe This famous hot pot was created in the 1970s by the “Howakai,” a group of local chefs. They noticed that the local “yamaimo” (mountain yam) has a firm texture and stickiness similar to wild yams due to the large temperature difference between day and night. They grated it, formed it into balls, and added it to the pot. Chicken, maitake mushrooms, Japanese parsley, and other ingredients are combined with the special soup to create the ultimate “Yamaimo Nabe.”
