Please enjoy our prosciutto, made with traditional artisan techniques and the great outdoors in our workshop in the mountains of Tazawako, and Tazawako free-range pork dishes. The pigs are raised happily and full of energy, and the fat is light, sweet and rich, condensed with the natural umami of pork.
